Khaman

I was impressed by Pooja's Khaman recipe,and wanted to give a try, I never tried making dhokla/Khaman. But,as it was very simple and easy with Gits Instant Khaman Mix. Thank you Pooja for detailed recipes, it really came out very nice and spongy :) !!

So, here it goes..


Ingredients

1 pack of Gits Instant Khaman Mix.
2 tsp Oil
240 ml Water


Tempering

2 tsp oil
1 tsp Mustard seeds
3-4 Green chillies
pinch of Asafoetida powder






Method

1. In a bowl take 2 tsp oil, instant khaman mix and exactly 240 ml or 8 Oz. of water. Mix all together very well so that there are no lumps left.
One more point to noted as mentioned by Pooja : To make Khaman more spongy take care to mix these all with minimum possible stirring. As this will left the bubble in the mixture which helps great to make it more spongy. Stirring too much will reduce the bubbles.
2. Pour this batter into a well greased backing trays. I used pressure cooker and one cooking pan to make Khaman, without whistle.
3. Steam cook it on high flame for 15 minutes. To check whether it it cooked do insert a knife/tooth pick, if it comes out clear (as we do to check whether the cake is baked or not, same way :)!! ), its cooked.
4. Now, let it cool for 5-10 minutes.
5. Meanwhile heat a pan add oil, When oil heats up add asafoetida, mustard, green chillies. Pour this over the Khaman.
6. Cut into the desired shapes and serve with sweet/hot chutney. Can have it without chutney too....

Using Gits or any other instant mix is indeed an easy way out!!! Does save a lot of time... Your pics sure say that they r worth a try :)

man, those look awesome! my mom makes them from scratch - soaking and blending the dals together. unfortunately, i never learned to make them this way and use besan instead. never tried the Gits. Maybe i'll give them a try out soon. very lovely!

khaman dhokla... my fav snack when i was in mumbai .. even khandvi... do u know how to make khandvi too ? its a weakness....

Hey, gits dhokla pack has all the instruction back of it, steam cook it for around 15 minutes.. in a cooker!!

sorry to bother you again. But I am not expert at steam cooking in cooker though I have seen my Mom doing it. There must be some specification-how much water to add, do u need to put dish in that water, use whistle/gasket? etc

Thanks for taking out time and posting new and tasty receipes here.. all those are really nice..
But if you dont mind i have one question for you, May I?
Actually the SAME Khaman Receipe is also given on back side of GITTS packet. It is i think, the SAME, ENOUGH TO UNDERSTAND. I have tried that way and mine khaman was also looking the same way as in the picture you have shown..So may I please know, the Extra effort taken to post it here..

Ya its very easy and simple to make, but most of my friends requested me to put it on, how i make it, so this is for them :)!!
Some of them are not that bold to try something new, specially recipes.. So..!!

I had tried TOMATO-KHAMAN and CORIANDER-KHAMAN as well.. add some ingradients (offcourse, suitable for that recepie) and ur new dish is ready.. If u add tomato (grind it with water) or finely chopped coriander to khaman, that gives ya new recepies mentioned above..
