Homemade Granola Bars


Homemade Granola Bars


  Its been long break from Blogging. Back with this Homemade Granola Bars from Sharmis Passion
This is so simple an yummy, i just added some flax seeds and jaggery instead of brown sugar for the original recipe.
My lil one also loved it :)!!


Ingredients
Quick cooking oats - 1 cup
Cornflakes - 1/4 cup
Honey - 1/2 cup
Butter - 1 tbsp
Jaggery - 1 tbsp
Water - 1 tbsp
Almonds - 5 chopped finely
Cashew - 2 tbsp broken into tiny pieces
Golden, black raisins and Dates - 1/4 cup
Flax seeds - 1 tblsp

Method
1. Heat a pan, Dry roast oats, cornflakes, all nuts and dry fruits, flax seeds. Fry until a nice aroma comes and oats slightly changes its color. Keep is a side.
2. In the same pan heat the butter, until it melts, now add the jaggery, honey and water until u see bubbles in them.
3. Now add the dry roasted oats mixer to it , until all of them are incorporated properly.
4. Mean while use a butter paper or grease a aluminium foil with butter.
5. Tranfer the mixer to the greased sheet and spread it using a wooden
laddle for 1/4 inch thickness. Make nice square edges, leave it to cool for 5-10 mins.
6. Now cut them to your desired shape and size. Then bake them for 180 degree for 10 mins. Cool them and store in a air tight container.

Honey Roasted Almonds

Honey Rosated Almonds


This is one of the best and simplest snack or munching at any time. I was searching to make something from almonds for a healthy snacking and quick recipe. Came across this honey roasted almonds, was done in 15- 20 minutes. I got this recipe from this vedio Honey Roasted almonds.I made half of the below recipe quantity.

Ingredients

2 cups Almonds
2 tblsp Honey
2 tblsp water
2 tsp Oil(I used Peanut oil)
1/4 cup Sugar
1/2 tsp Cinnamon powder
1/4 tsp salt


Method

1. Roast the almonds in a baking tray for about 10 minutes in oven at 350 degree. Let them cool.
2. Mix in honey+water+oil all together. Heat a non-stick pan and pour in the mixer of honey,water and oil.
3. When it starts to boil, tiny bubbles add the roasted almonds an keep stiring till all the liquid is absorbed. Takes about 1-2 minutes.
4. Atlast turn off the heat and add sugar, Cinnamon powder, salt - stir well. Cool it again on a baking tray. Honey roasted almonds are ready for munching !!

Microwave Vanilla Cake

Microwave Vanilla Cake Eggless


I was so much tempted to make a microwave cake when i saw Cham's - Spice club recipe for Microwave chocolate cake. I have made some changes in the recipe, used EnerG egg replacer for the first time and cake puffed up very well, an soft. Very happy with the result of eggless cake. This cake was made so fast in a giffy!!

Here is the recipe which i wish to pass on to..
1. Mahima's event 15 minutes cooking.
2. Srivalli for her event Mithai Mela


Ingredients

All purpose flour: 3/4 cup
Hot water:2/3 cup divided
Sugar 3/4 cup
Baking soda 1/2 tsp
Baking Powder 1/4 tsp
Salt 1/4 tsp
Vegetable oil 2 tblsp butter + 2 tblsp oil
Egg 1 (equals to 1 1/2 tsp of Energ + 2 tblsp of warm water)
Vanilla extract 2 tsp


Method

1. Grease a microwave safe bowl.
2. In mixing bowl, combine all dry ingredients flour+baking soda+baking powder.
3. In a mixing bowl take 1 1/2 tsp of EnerG Egg replacer whisk it with 2 tblsp of warm water.
4. Add the oil + butter,hot water, vanilla. Mix until it blend smootly.
5. Pour into the grease microwave pan and micowave in high for 5 to 6 min. Let it stand 10 min and invert the cake and remove the wax paper.
6. Serve with some choco butter icing on it, enjoy !!
This hardly takes 15 minutes for the whole process of preparation an baking is just 5-6 minutes.

Eggless Vanilla Choco cake

Eggless Vanilla Choco Cake


I tried to make a cake with icicing for the first time and came out pretty good. Made vanilla cake using whole wheat pastry flour. Actually i searched a lot for a eggless plain cake, at last found this and made this on my hubby's Birthday.

Ingredients

1 1/4 pressed cups of Whole Wheat pastry flour
½ Can of condensed milk
100 ml of soda water
1/3 cup of butter
1 tblspn of powdered sugar
3/4 tblspn of baking soda
3/4 tblspn of baking powder
2 table spoons of vanilla extract


Method

1. First Preheat the oven at 300 degrees before starting mixing. Take floor, with baking soda + baking powder, sift and keep aside.
2. In a big bowl add butter and sugar and mix well together.Then add condensed milk and beat well for 5min continuously.
3. Add soda water and beat well. Add vanilla extract and mix well till you feel that it has been puffed up.
4. Add flour mix gradually and mix it in single direction. While mixing we must be very careful so that it will not create any lumps.
5. Grease the baking dish with butter and put all purpose floor in it. Dust it properly and then pour the batter into the dish and bake it at 200 degrees for 5-7 min and then bake it at 150 degree for 20-25min. When done remove it and cool it. Do not try to remove the cake before it cools down.



Choco butter Icicing

5 tblspn butter
1/2 cup Cocoa powder
2 cup powdered sugar
2-3 tblspn milk
1 teaspoon vanilla extract

In mixer bowl cream the butter. Add the cocoa and powdered sugar alternately with milk. Beat to spreading consistency adding more milk if needed. Blend in vanilla. Forsting is ready.

Note: I used a rectangluar shape baking tray. Cutted it into two and made a double layer cake. After the cake is cooled, add the icing around it and over it smoothly. I have decorated with whipping cream later on top and edges.

Dates cake eggless

This is one of the hit cake from Shilpa's - Aayis recipes, whenever i make this cake it never went wrong and came out perfect, thick and spongy. We both love this cake anytime, and most of my friends too. Shilpa thank you for such a wonderful cake for vegetarians. This cake actually gave me the confidence to bake some more cakes, that even eggless cakes comes out good. I have made some variation in the ingredients and quantity. I have used butter and baking powder, except all of ingredients are same as specified by Shilpa.


Ingredients

1 cup all purpose flour(maida)
18 dates(Khajoor)(Used seedless)
3/4 cup milk
3/4 cup sugar
1/4 cup oil
1/4 cup butter
1/2 tsp baking soda
1/2 tsp baking powder
1 tblsp spn cashews chopped


Method

1. Soak the dates in warm milk overnight after removing the seeds. If using seedless no need to soak them directly grind them in the blender using milk.
2. Add sugar and grind them to a smooth paste along with the milk in which it is soaked in. Take them in a large bowl.
3. Meanwhile,Sieve together all the dry ingredients flour+baking soda+baking powder.
3. Now add oil+butter to the blended dates puree.
4. Spoon by spoon add the flour mixer to the and mix slowly. Atlast add the chopped nuts and mix.
5. Pour it in a dusted baking tray and bake in the preheated oven 350F for about 30-40 minutes. So that the inserted knife/toothpick inserted in the cake comes out clean.

Eggless Banana Yogurt Cake

Eggless Banana Yogurt Cake


This wonderful cake is Meera's recipe Eggless Banana Cake , thank you so much for such a nice eggless cake :)!!.It came out very good. I just added some Almond and cashews chopped instead of Doodh masala. This cake is really easy and its oil or butter free. Wonderful Meera for such a nice cake.

I'm sending this cake to Siri's event for Frozen Yogurt cool summer. Enjoy hosting Siri.


Ingredients

1 cup mashed Ripe Banana
2 cups rawa
1 cup plain yogurt
1 cup milk
3/4 - 1 cup sugar
3 cardamoms, peeled/crushed
1/2 tsp baking soda
A pinch of salt
1 tbsp Almond and Cashews chopped


Method

1. Mash bananas. Add yogurt, milk, sugar. Whisk together.
2. Mix salt, baking soda and raw.
3. Add the dry mixture into the wet one.Stir well so no lumps are formed.
4. Add chopped almond, cashews and crushed cardamoms,stir. Cover and keep aside for 1 hour.
5. Preheat oven to 350 F. Grease & pour the batter in the pan. Bake for 30 - 45 minutes.(It took 45 minutes for my cake, as Meera told it depends on the oven :) !!)

Banana Muffin is for the baking fever spread all over.. as it is holiday season !!

This recipe is picked from Mahanandi - Banana Walnut cake with a slight changes.I have taken Cashew nuts instead of walnuts, Butter instead of oil, I have taken milk and baking soda.

I love cake and keep searching for the eggless cakes. Thank you Indira for your recipes. So here is the recipe.. enjoy baking.. !!



Ingredients

1 cup All-purpose flour
1/4 cup Cashew nuts chopped
1 banana smashed
1/4 cup Sugar powder
4 tblsp Butter
1/2 tsp Baking powder
1/2 tsp Baking soda
1 tsp vanilla extract
1/4 cup Milk







Method

1. Mix all dry ingredients - flour, baking soda and powder.
2. Mix the wet ingredients - butter and sugar first. Then add the smashed banana, vanilla extract and Add milk.
3. Now add flour spoon by spoon and mix well. If the batter is too tight can add more milk.
4. Place the muffin cups in the muffin cake pan, pour the mixture 3/4 of each cup.
5. Can decorate with choco chips on the top.
6. Bake it in a preheated oven at 350° F for about 30 minutes.

Eggless Apple cake

Eggless Apple Cake


This was my second attempt for the eggless cake. Apple Eggless cake is very simple and easy to make and even the taste wice its good.
So here is the recipe below.


Ingredients

1 cups Maida (All purpose flour)
1 peeled & grated Apple
1/4 cup Butter
1/2 cup Fine Sugar
1/2 cup Milk / Milkmaid
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Vannilla essence






Method

1. Mix all dry ingredients - flour, baking soda and powder.
2. Mix the wet ingredients - butter and sugar first. Then add the grated apple, vanilla essence and add milk.
3. Now add flour spoon by spoon and mix well. If the batter is too tight can add more milk.
4. Pour the cake mixture to the baking tray of ur choice.
5. Bake it in a preheated oven at 350° F for about 30 - 35 minutes.
