Simple and tangy Egg plant(Brinjal) rice, in kannada its called Vangi Bath. You can use long or round brinjal, I prefer MTR Vangi Bath masala powder as it is readly available in store :) !! No need to make it at home.. I make the way it is explained on the pack, it turns out good !! I like the smell of Vangi bath.. but my husband doesnt :( !!

So here is my version of Vangi Bath.. which is common recipe in south India, specially in Bangalore and Mysore !! lol !!
Ingredients
1 cup Cooked Rice
1/2 cup Round Egg plant sliced
1-2 tblsp Onions sliced
1/4 cup Carrot and Beans sliced
1 pinch turmeric
1-11/2 tbsp Vangi Bath Masala (I prefer MTR)
1 tsp Tamarind Paste (mixed in 1-2 tblsp of water)
1/2 tsp Jaggery
salt as per taste
Tempering
2 tbsp Oil
1/2 tsp Mustard seeds
1/2 tsp Urad dal
Curry leaves
Cashew nuts (optional : slighty fried in ghee)
Method
1. Heat oil in a pan put the tempering ingrediants.
2. After tempering fry onions for 1-2 minutes.
3. When onions are tansperent add the sliced Egg plant, Carrots, Beans,sprinkle pinch of turmeric fry for 4-5 minutes till vegetables are cooked .
4. Now add the Vangi bath masala, tamarind water, jaggery and cook for 1 minute.
5. Mix the cooked rice gently.. Garnish with cashews.. Vangi Bath is ready to to served !!

I make the Tamilnadu version of this, called kathirikkai sadham. The masala's a little different. My husband loves vangibath, as he grew up in Bangalore! :)

Looks yum! Vangi Bath is all time Favourite at our place.
Looks great! But guess what? I made the same one for Pooja's event and that too with MTR - masala because I think that's the best!! :-) But there are a few difference, thank God! I didn't use cashews and other veggies. So hopefully I will blog about it too!!:-) Luckily I made bharta too last week, will blog about it!
