Sweet Shankarpali


Sweet Shankarpali

This is one of the simple and best snack any time of the day. Now as it is the festival season, good to be made in advance. Everybody know the salty one, this is a little sweet version.Kids will surely love it , my lil one loves it :). This stays good for 1-2 weeks in a airtight container. Here comes the recipe..



Sweet Shankarpali



Ingredients
• Maida/All purpose flour - 1 cup
• Rava/Suji (Semolina) – 1/2 cup
• Milk – 1/2 to 3/4 cup
• Ghee – 3-4 tblsp
• Sugar – 3/4 cup
• Salt as per taste
• Oil to deep fry

Method
1. Take a small pan, heat the ghee and keep aside.
2. Mix milk and sugar in a bowl, until the sugar is fully dissolved.
2. Now mix maida, rava, salt, warm ghee and milk and sugar mixture. Start kneading to form soft and smooth dough. Keep kneading the dough for about 5 to 10 min with pressure.
3. Now make big balls out of the dough and roll them with the chapatti roller.
4. Roll them into round shape similar to a roti but keep the thickness for about 1/2 inch.
5. Take a knife and cut them into Square or Diamond Shapes.
6. Heat oil in a kadhai once the oil is hot add the shankarpali to it ensuring gas is on low flame.
7. Once the shankarpali are nice golden brown remove them on tissue paper to absorb the excess oil. Repeat the same procedure with the remaining balls.
8. Cool them and store it in the airtight container.

Note:
1. May need some extra maida or milk to make it a soft dough.
2. Making the roti thick, will make the shankarpali krispy bites.

  Its been long break from Blogging. Back with this Homemade Granola Bars from Sharmis Passion
This is so simple an yummy, i just added some flax seeds and jaggery instead of brown sugar for the original recipe.
My lil one also loved it :)!!


Ingredients
Quick cooking oats - 1 cup
Cornflakes - 1/4 cup
Honey - 1/2 cup
Butter - 1 tbsp
Jaggery - 1 tbsp
Water - 1 tbsp
Almonds - 5 chopped finely
Cashew - 2 tbsp broken into tiny pieces
Golden, black raisins and Dates - 1/4 cup
Flax seeds - 1 tblsp

Method
1. Heat a pan, Dry roast oats, cornflakes, all nuts and dry fruits, flax seeds. Fry until a nice aroma comes and oats slightly changes its color. Keep is a side.
2. In the same pan heat the butter, until it melts, now add the jaggery, honey and water until u see bubbles in them.
3. Now add the dry roasted oats mixer to it , until all of them are incorporated properly.
4. Mean while use a butter paper or grease a aluminium foil with butter.
5. Tranfer the mixer to the greased sheet and spread it using a wooden
laddle for 1/4 inch thickness. Make nice square edges, leave it to cool for 5-10 mins.
6. Now cut them to your desired shape and size. Then bake them for 180 degree for 10 mins. Cool them and store in a air tight container.

Raagi Halwa

Beat the summer heat with this cooling halwa.This is one of the recipe i used to eat in my childhood specially during hot hot summer. My mom used to make it for summer vacation. This is very simple and easy to make. Actually it is called raagi manni/Halwa. Make it in the night and keep it overnite, next day morning cut it and freez them. I dont think so will have more to store them for the next day.



Ingredients

1 cup Whole Raagi
1/2 cup Jaggery
2-3 tblsp grated fresh coconut
1 tsp cardamom powder
1 tblsp ghee
salt a pinch

Method

1. Soak raagi in water for 2-3 hours.
2. Take above all ingredients in a mixer grinder with little water.
3. Grind it till smooth paste.
4. Strain through a fine sieve and squeeze out to extract milk from that.
5. Cook in a heavy bottom pan, stirring constantly till it becomes thick and transparent.
6. Add ghee, cardamom powder and mix well.
7. When halwa consistency is reached, remove from fire and pour on a greased plate. Cut it to required shape.

Mangalore Buns

Mangalore buns(ಮಂಗಳೂರು ಬನ್ಸ್) 


These buns are famous in Mangalore, and are made with banana, curd - this make it soft and puffy. Because of its texture, that is crispy outside and soft inside its called buns - i guess. Love these buns when my mom used to make it on my demand. She used to make it sweeter version so that it can be eaten on its own.


Want to get rid of the sitting banana on your fruit tray, try these delicious buns. Healthy too, traditionally used all purpose flour instead use whole wheat flour. This has banana, curd, wheat - whole some breakfast or snack, good for growing kids. One of my favorite snack-breakfast, I can have these buns all day long.




Ingredients


2 riped mashed bananas
2-21/2 cups Whole wheat flour
4-6 tblspn sugar/Brown sugar
2 tblspn yogurt
1/8 tspn baking soda
1/4 tsp Cardamom powder(optional)
Oil for deep fry
Salt as per taste




Method


1. In a bowl add sugar, salt, soda and yogurt to mashed bananas. Mix well.
2. Now add wheat flour and mix to make dough. The amount of flour specified is approximate, add enough flour to make a stiff dough.
3. Cover this dough and leave for about 3-4 hours. Maximum resting time of this dough is 8 hours(overnite), this make the dough to raise in its volume.
4. Make small balls of dough and roll into small puris, slightly thicker than the regular puirs.
5. Deep fry on one side till the buns puffs up completely. Turn upside down and fry on the other side till golden brown and serve hot.


Note : Adjust sugar as per the taste. This above recipe makes these buns sligthly sweet.

Made this burfi on Varamaha Laxshmi Pooja last week. Long back when i started blogging made tried this burfi which is very simple and easy, totaly lost about this recipe and suddenly remembered when one of my friend asked for this recipe. Here is the recipe for Mango Coconut Burfi.These burfi can be made in advance and refrezearted for aleast 15 days.

Microwave Vanilla Cake

Microwave Vanilla Cake Eggless


I was so much tempted to make a microwave cake when i saw Cham's - Spice club recipe for Microwave chocolate cake. I have made some changes in the recipe, used EnerG egg replacer for the first time and cake puffed up very well, an soft. Very happy with the result of eggless cake. This cake was made so fast in a giffy!!

Here is the recipe which i wish to pass on to..
1. Mahima's event 15 minutes cooking.
2. Srivalli for her event Mithai Mela


Ingredients

All purpose flour: 3/4 cup
Hot water:2/3 cup divided
Sugar 3/4 cup
Baking soda 1/2 tsp
Baking Powder 1/4 tsp
Salt 1/4 tsp
Vegetable oil 2 tblsp butter + 2 tblsp oil
Egg 1 (equals to 1 1/2 tsp of Energ + 2 tblsp of warm water)
Vanilla extract 2 tsp


Method

1. Grease a microwave safe bowl.
2. In mixing bowl, combine all dry ingredients flour+baking soda+baking powder.
3. In a mixing bowl take 1 1/2 tsp of EnerG Egg replacer whisk it with 2 tblsp of warm water.
4. Add the oil + butter,hot water, vanilla. Mix until it blend smootly.
5. Pour into the grease microwave pan and micowave in high for 5 to 6 min. Let it stand 10 min and invert the cake and remove the wax paper.
6. Serve with some choco butter icing on it, enjoy !!
This hardly takes 15 minutes for the whole process of preparation an baking is just 5-6 minutes.

Sesame Ladoo for Makara Sankranthi


Makar Sankranti is one of the most auspicious occasions for the Hindus, and is celebrated in almost all parts of the country in myriad cultural forms, with great devotion, fervour & gaiety. It is a harvest festival. It is the day when according to the Hindu astronomy the sun enters the rashi (zodiac) of Makara (Capricorn). Makar Sankranti is perhaps the only Indian festival whose date always falls on the same day every year i.e. the 14th of January. Makar Sankranti is celebrated in the Hindu Calendar month of Magha. There is another significance of this day, after this day, the days start becoming longer & warmer, and thus the chill of winter in on decline.

Belated Makara Sankranthi wishes with this seasme ladoo recipe :) !! I still remember those days, when i used to get all the ingrediants from the store previous day of sankranthi,for pre prepration for the ellu bella and Sesame ladoo. Last year i posted Ellu bella recipe, so this time Sesame ladoo. In kannada its called 'Ellu unde' means sesame ladoo.. :) !!

I Wish to send this ladoos to Priti's event Festive Food-Makara Sankranthi


Ingredients

11/2 cups sesame seeds
1/4 cup dalia/dalya/roasted gram without skin slightly roasted
1/4 cup peanuts roasted, unskined and splited
1-2 tbsp ghee
1 1/4 cups jaggery/brown sugar
1/2 tsp cardamom powder, freshly ground


Method

1. Roast sesame seeds in a low flame, till the color changes slightly. Keep aside.
2. Now heat a thick bottom pan with ghee in it.
3. Add the jaggery in it, keep stiring till bubbles are formed and it is golden in color.
4. Its time to add sesame, peanuts, dalia, cardamom powder and mix well. Switch off the heat, let this mixture stand for 3-4 minutes as its very hot!!.
5. Apply some ghee to both the hands and make ladoos of perfered size. Its better to make ladoos when the mixure is of tough able hot. Orlese it will be difficult to make ladoos.

This is one of my favorite snack, nice crispy sweet matri are great and healthy for kids. Not only kids every body can enjoy it at any time as a snack. This is healthy as it has sooji and whole wheat flour specially for kids.

Learnt it form one of my freind, as she bought it when we were on a trip for 5 days. She bought for her kid, and i was like, can i get some more, you can't just stop eating one :). Actually i dint come to know of what was it made, i was just wow... such a nice cookies and enjoyed eating and roaming with them. It was fun.....

Here is the sweet sooji matri.. And sending it to sending this to Madhavi’s Celebrating Children's Day Event.

Ingredients

1 cup Cream of wheat/Sooji/Rawa
1 cup Whole wheat flour/Atta
1 to 1 1/2 cup Sugar
salt to taste
Oil for deep frying


Method

1. Mix all ingredients. Add water little by little kneading into a chapathi/roti dough.
2. Break into small portions, make small balls and just press a little so that it remains thick,so this is what i made, simplest one. Can shape the matri of your desire.
3. Heat oil in a frying pan, add some matri at a time. Fry till lightly golden, flip side and repeat.
4. Drain and cool to allow matris to become crispy.
5. Can store these sooji matri for 5-6 days in a air tight container.

Hi,I'm back with the sweet dish i made on Diwali - Laxmi pooja day. I took the recipe of Shilpa - Apple Halwa. Thank you Shilpa for the wonderful recipe of halwa. I have just modified it a bit to get a burfi texture, as i added some Khowa/Mawa and some dry fruits.

Here it goes Apple Burfi..


Ingredients

2 cups grated apples (3-4 apples,peel off the skin)
1 cup sugar
1-2 tblsp ghee
1/4 cup Khowa/Mawa
3 tblsp Almond powder
2 tblsp Cashews chopped
1 tblsp Raisins
1/2 tsp cardamom powder


Method

1. Heat ghee in a thick bottom pan, add the grated apple and fry on a medium flame for 10-12 minutes, till all the water evaporates and apple is cooked.
2. Now add the sugar. As Shilpa pointed out that measure the cooked apple and the same quantity of sugar to be added.
3. Now keep stirring the mixer as it thickens up.
4. Now add Khowa/Mawa, I used ready khowa from store. If it fresh also fine.
5. Along with it add all the nuts - Almond powder, Cashews, raisins.
6. Now keep stirring for about 2-3 minutes.
7. When all of them come together in the middle living ghee aside, add cardamom powder. This is ready to be shifted to the greased tray of ghee.
8. Cool for about 30-40 minutes in freezer. Then cut desired shape.

Wheat flour laddu is very simple, easy and a quick to make with very little ingredients. I made this laddu on occasion of Krishna Janmashtami.

I'm contributing this laddu to Mythreyee's Paajaka for the event Sweet Series - Chikki and Laddu.


Ingredients

Wheat flour 1 cup
Powdered sugar 1 cup
Ghee 1/2 cup
Cardamom powder 1/2 tea spn



Method

1. Heat ghee and add wheat flour and fry on a very low flame for around 10 minutes till you get nice wheat aroma .
2. Now add sugar and fry for 5 more minutes.
3. Add cardamom powder, cool it a bit do not cool completely, laddu should be made when the mixture is still hot. Add more ghee, if you find its difficult to bind into laddu. Store in air tight container after cooling the laddus.

Note: Laddus break of easily so need a bit of patience to bind these laddus

My mother make Wheat pancakes, by soaking whole wheat over night and grinding it with coconut, jaggery one of my favorite pancake :)!!I love the taste of grinded wheat. But here I have is a instant wheat flour pancake, with some simple changes.

This is simple and instant made pancake, which i wish to send it to three events :)!!

For Raaga's - WBB Express Breakfast for really quick breakfast, this is one of the quikest i feel :)!! Nice event Raaga for simple breakfast.

For Paajaka's - Sweet series event of Puran poli or sweet chapathi/roti.

For Susan - Pancakes on Parade event.


Ingredients

1 cup Wheat flour
1 cup Milk
1/2 cup Jaggery/Sugar/Brown sugar(i uesd jaggery)
1-2 tblsp Coconut powder/freah grated coconut(i used coconut powder)
1/2 tsp Caradamom powder
Ghee/butter
pinch of salt


Ingredients

1. Mix all the ingredients. The batter must be as any normal dosa batter, add more or less milk depending on the consistency.
2. Heat a tava, spread ghee/butter, pour the batter to a round shape.
3. Fry both the side. Wheat sweet pancake is ready to be served.

Mava Malpua

MAVA KACHORI/ MAVA MALPUA


I was searching for rajasthani recipe luckly found this sweet recipe in Taradalal recipe site. I tried my level best to get the shape of Mava Malpua, hope all like it.

This is mava kachoris are famous in Jodhpur. Rich dry fruit and mava (khoya) stuffed crisp deep fried kachoris are coated in sugar syrup. These kachoris are a welcome treat at any time of the day. These sweet kachoris are often called "Gujjias" and are a "must have" for the Holi festival. Can store these for several days in an air-tight container.

I'm sending this to Padmaja's - Spicyanna for RCI - Rajasthan. Thank you making me try Rajasthani recipes. Enjoyed participating.

Updated : I'm also sending this Mava Malpua to Easy Craft's - Think spice - Think Caradamom. I came to know today, so just sending my entry. Easy Craft thank for the event.

I used half of the quantity, depends on the size and shape we make the dough. I made a small size malpuas. These are the measurement given in Tarladalal site. So,here it goes..


Cooking Time : 30 mins.
Preparation Time : 15 mins.
Makes 6 kachoris.



For dough

1 cup plain flour (maida)
2 tablespoons melted ghee
a pinch of salt
ghee or oil for deep frying


For Filling

1/2 cup (750 grams) khoya (mava), grated
5 to 6 almonds, sliced
5 to 6 pistachios, sliced
1/2 teaspoon cardamom (elaichi) powder
1 tablespoon sultanas (kismis)
1 tablespoon sugar
a few saffron strands


For Sugar Syrup

1 cup (200 grams) sugar
1/2 cup water
a few saffron strands


For Dough

1. Combine all the ingredients and knead into a firm dough using enough water. Knead well for approx. 5 to 7 minutes.
2. Allow the dough to rest under a damp muslin cloth for 10 to 15 minutes.
3. Divide the dough into 12 equal portions. Keep aside.


For Sugar Syrup

1. Dissolve the sugar in ½ cup of water and boil the syrup for 4 to 5 minutes.
2. Add the saffron and mix well.


Method

1. Mix up all the filling ingrediants.
2. Divide the dough,roll out each portion of the dough into round shape.
3. Place a portion of the filling in the centre and fload it.
4. Turn the edges of the kachori.(I used a knife to make the edges design).
5. Deep fry the kachoris in hot ghee/Oil over a slow flame till the kachoris turn golden brown in colour. These take a long time to fry as the crust is thick and needs to be cooked on the inside also.
6. Drain on absorbent paper and allow the kachoris to cool slightly.
7. Dip the kachoris in the hot syrup. Drain and keep aside.
8. Serve hot or cold.

Note:
You can even serve these kachoris without dipping them in sugar syrup also.

Hi friends, today is my Parents 25th Wedding Anniversary... So this post is to my parents..My mother always had a wish of putting there snap in a local paper i.e Udayawani, as she used to see others couple celebrating there 25th wedding anniversary,as there son or daughter used to wish there parents. I'm not able to do that, but just trying to fulfill my mothers wish, by wishing through my blog, not only the local people,all over the world can wish on there Anniversary !! I'm missing the function back home, but thought of sharing with my blog friends...as i don't want to miss !!

CORN DELIGHT


Ingredients

1 cup Corn flour
2 cup Milk
1 cup Water
1 cup Sugar
2 tsp Ghee
2 tsp Custard powder
1 tsp Cardamom powder
1 tbsp Pista chopped


Method

1. Mix the corn flour, custard powder in water.
2. Mean while heat the milk, in thick bottom pan.
3. When milk starts boiling add the corn flour mixer, Sugar, Ghee and keep on stiring. As the corn flour starts thickening.
4. At last add caradamom powder. Transfer the mixer in a grease plate,granish with chopped pista and allow it cool for about 1 hour, cut shapes of your choice.
Corn delight is ready to be eaten.. !!

Pumpkin Halwa

This dessert recipe is picked from Mahanandi's Blog .With a slight change in the recipe. Actually it was Pumpkin Burfi, I made it halwa. Hope u enjoy this recipe.

I made this Pumpkin Halwa on the ocassion of Deepavali. It came out good. So here is the recipe below....


Ingredients

2 cup grated Yellow Pumpkin
8-10 Almonds
2 cup whole Milk
1 cup Sugar
1 tbsp Ghee
1 tsp Rose water
1 tsp cardamom powder


Almond powder

Soak half-cup almonds in warm water for about 2 hours. Remove the skins and make a smooth powder in a food processor.


Milk-Sugar syrup

Meanwhile to prepare milk-sugar syrup take 2 cups of whole milk and 1 cups of sugar in a big, thick-bottomed vessel. Cook the mixture until is gets thick and is reduced to about half of the original quantity. Takes about 30 to 35 minutes.






Method

1. In a big wide bottomed vessel, heat about 1 tbsp of ghee on medium heat.
2. Add the grated pumpkin to the melted ghee.Gently mix and cook the pumpkin. Cook for about 20 minutes, stirring in between, until the raw smell of pumpkin disappears and color changes from yellow to orange-yellow.
3. Add the almond powder and milk-sugar syrup. Now cook for about 5-7 min.
4. Add cardamom powder and rose water , mix , take away from the heat.
5. Halwa is ready to be Served. Can be served hot or cold.

Mango coconut burfi is similar to coconut burfi just add mango pulp just for a change. And see the difference in taste. It taste's slightly Tangy and sweet just like Mangoes but with coconut.



Ingredients

1 cup Mango pulp
11/4 cup coconut powder
½ cup condensed milk
1/4 cup sugar(optional)
Ghee 3 tsp

Method

1. Heat 1 tablespoon ghee and add coconut powder. Fry it for 1-2 minutes till you get the nice coconut smell. Don't brown the coconut powder. This frying is just to take out the rawness of coconut if any. Keep this aside to cool it.
2. In the same non-stick pan,add 1 cup canned sweetened Mango pulp and 2 tsp Ghee,stir until you see the ghee on top and the sauce thickens. For about 10-15 minutes.
3.Now Add the fried coconut powder,Condensed milk,sugar,cardamom powder and mix well. Keep stirring until they form a lump.
4. Add to a greased plate,pat lightly to flatten.
5. Keep it in the freezer for around one hour. Later cut them to the desired shape

Note:
1.I used coconut powder that you get easily in any Indian grocery store.
2.Mango pulp can be kesar or alfonso.
3.Sugar is optional, if you feel condensed milk and mango pulp will make the sweetness needed can skip sugar.

Strawberry Bath

Strawberry Bath


When bored with usual stuffs, can try out this simple recipe. When there were lot of strawberry's, I thought what to do?. Just flashed and the recipe is here below.
This is similar to Kesari Bath, Only the variation is Strawbery....!!!


Ingredients

1 Cup Rava (Suji)
5-6 Strawberry cut into pieces
1 Cup Sugar
2 Cups hot Water
1/2 Cup Ghee (clarified butter)
1/4 Tsp Cardamom powder
2 Tbsp chopped Cashew nuts and raisins








Method

1.Heat ghee in a pan, add sooji, stir and roast on low till a nice aroma is obtained.
2.Add water, Strawberry pieces, sugar to the roasted rava.
3.Let it boil till all the liquid is absorbed, it take around 5-7 min.
4.At last add cardamom powder switch off the gas and mix it.
5.Fry raisins and cashew nuts in 1 Tbsp of ghee and garnish, Strawberry Bath is ready to serve hot or cold.

Ingredients

• 3/4 Cup besan/Gram flour
• 3/4 Cup powdered sugar
• 1/3 Cup ghee
• 1/4 tsp Elaichi/cardamom powder






Method

• Melt ghee in a kadhai and cook the besan over low flame.
• Stir continuously till the besan becomes light brown in colour.
• Mix the elaichi powder, sugar and stir. Keep stiring for around 2 min.
• Remove from the flame and pour it on a thali. Let it cool.
• Divide it into equal parts and give the shape of laddus.
• Besan Laddoo is ready.

Kesari Bath

Kesari Bath


Kesari Bath is also known as Sooji Halwa. This is a recipe which is very easy and simple to make at any ocassion.

serves 4-5
Preparation time 15 - 20 min.

Ingredients

1 Cup Rava (Sooji)
1 Cup Sugar
1 Cup Milk
1 1/2 Cups Water
1/2 Cup Ghee
1/4 Tsp Cardamom powder
1/4 Tsp saffron or orange colour
2 Tbsp finely chopped cashews and raisins





Method

1.Heat ghee in a pan, add sooji, stir and roast on low till a nice aroma is obtained.
2.Mean while mix the saffron or orange colour into the milk.
3.Add water, Milk, sugar to the roasted rava.Let it boil till all the liquid is absorbed, it take around 5-7 min.
4.At last add cardamom powder switch off the gas and mix it.
5.Fry raisins and cashew nuts in 1 Tbsp of ghee and garnish kesari bath, is ready to serve hot or cold.
