Hot & Sweet Mango Pickle

Hot & Sweet Mango Chutney


I was looking around for a mango pickle recipe, but mangoes were semi ripe and i had no idea what to make out of it. Then found this recipe of pickle, which is more like a jam, than a pickle, it is sweet, hot and tangines of mango. Its yummy!! Do give a try!! Goes well with Chapatis, dosas and spread it over bread too, and enjoy.


Ingredients

10-12 Semi-ripe mangoes,
5-7 dates
1 cup Jaggery
2-4 green chilies
2 Tsp Chilly powder
1 Tsp turmeric powder
1 Tsp mustard
1/2 Tsp Asafetida
1-2 tblsp groundnut/cooking oil
Salt as per taste


Method

1. Peel off the skin of the mangoes and grate it.
2. Deseed the dates and chop them.
3. Season oil with mustard, green chilies, asafetida, chilly powder and turmeric powder. To this add the mango and jaggery and cook till mango is soft. Add dates and salt. Simmer for 3 to 4 minutes.
4. Store in a airtight containner, stays for a month.

I am not familiar with Jaggery or asafetida. Wondering if there is a substitute for these ingredients? I am from USA and possibly these are ingredients from India? Recipe looks wonderful however

You can use brown sugar instead of jaggery, and asafetida is optional for tempering. If u have any Indian grocery store near by u will surely find it!! I was in Kansas US for 3 yrs, So i knw its bit difficult to find Indian spices !!
